Pine Gimlet

A super fresh and simple cocktail to make at home using foraged pine tips, which pairs exceptionally well with our Little Biddy Gin - Classic.

60ml Little Biddy Gin – Classic
15ml Lime juice
30ml Elderflower & Pine Cordial

Method
Shake and strain over ice into a rocks glass

Garnish
Pine tip

Elderflower & Pine Cordial
200g Fresh Douglas Fir pine tips
700ml Elderflower cordial (store bought is suitable)

Method
Cut pine tips into small pieces.
Infuse pine tips in Elderflower cordial.
Leave to rest for 24 hours, then fine strain into a sterilised jar and refrigerate.
